The chemical formula for Sodium Bisulfite is NaHS03. It is in powder form and is added to water and sprayed on fruits that being prepared for dehydration. The reason for using sodium Bisulfite is that it helps to preserve flavor and retain vitamins in dehydrated foods.

Warnings: Some people may be sensitive to this product. Also, it is very important that it does not mix with sodium hypochlorite which is chlorine because combining these two products will cause dangerous fumes.
